Fermented coffees can be vivid, aromatic and layered. Brewing with care helps those notes stay elegant.

Start with fresh water, a medium grind and a 1:16 coffee-to-water ratio. Let the first pour bloom for 30 to 45 seconds, then pour slowly in circles until you reach your target weight.

Suggested filter recipe

Use 18g of coffee and 288g of water at around 92 to 94C. Aim for a total brew time between 2:45 and 3:30, then adjust grind finer or coarser to taste.
